This low carb chocolate chia protein pudding is a delicious dish you can eat for dessert or even for breakfast! Low carb (2.5g net carbs) but high in protein and only takes 5 minutes to make.
Another Ideal Protein packet quest. I was never much of a pudding eater growing up but when I was on the Ideal Protein diet, I ate a protein pudding packet every night and I really enjoyed it. The creaminess was very soothing and of course the chocolate was my favorite. However they are a bit pricey so I’ve been on a quest so make my own. So this is my quick and easy low carb chocolate chia protein pudding that only has 2.5g net carbs!
Essentially this is simply chia pudding with protein powder added to it. Chia seeds are a healthy thickener that is full of fiber too. So when you whizz all of the ingredients in the blender and refrigerate, you end up with a thick and tasty chocolate pudding!
I have another easy low carb chocolate peanut butter pudding using avocados (pictured below) that just great too. In this recipe you are using an avocado to add the thickness, not the chia seeds. So if you find you are not a fan of chia seeds, check that recipe out.
Two ingredients that I used that I love and are low in carbs are Isopure protein powder and Sweet Leaf vanilla stevia. The carbs in protein powders can vary and I like this one because one scoop has only 1g net carbs and 25g of protein. The liquid stevia has a great taste and I use in lots of recipes.
Chocolate Chia Protein Pudding
You could omit the cocoa powder and add some berries to make it a fruity flavor. Also you could add different flavoring or add ins to make it more interesting. Sometimes I like to a tablespoon of toasted coconut or peanut butter powder. I hope you like this simple but tasty chia pudding. The nutrition for 1 serving is:

Ingredients
- 1 tablespoon cocoa powder
- 1 cup unsweetened almond milk
- ¼ cup chia seeds
- 1 scoop chocolate protein powder I used IsoPure Dutch Chocolate
- liquid vanilla stevia to taste I use Sweet Leaf Vanilla
Instructions

Add all ingredients to a high speed blender and blend on high for 30 seconds.

Pour into 2 dishes and refrigerate for an hour or two before serving.
