I’m on a diet again. I’ve gained a few pounds this winter and it’s time to buckle down and get serious. For me it’s having a plan and journaling everything I eat. So I was hankering for something quick and sweet  when I spotted a big bag of raw pecans on the counter.
Now this is not the most delicious snack I’ve ever eaten but it’s quick and it’s good and it helped me in a pinch so I thought I’d share it with you. I took 2 ounces of raw pecans and dry roasted them in a skillet over medium-low heat. You have to watch that they don’t burn because they will roast rather quickly. Add a sugar free syrup of your choice and mix till the syrup evaporates. This will only take a minute or two. I have about 10 Torani Sugar Free Syrups that I use for a variety of things. I’ll have to write a post about them in the future. Anyway today I used a Vanilla Bean flavor that was the perfect bit of sweetness for these pecans.
When the syrup evaporated I took the nuts off the stove and let them cool. I divided them into 2 portions and ate one after lunch. It was pretty good! I think next time I will try with sugar free maple syrup or my amaretto flavored syrup. It might also be good with some orange zest  and cocoa powder. Give it try and let me know what you think.
