I’m so excited for the big game! I love going to football parties as well as having them. To me, sitting around with friends and family, drinking and eating is the best. This year I wanted to make something different. I knew I wanted to make something that was a finger food and that would be nice and hearty for a football crowd. That’s why I came up with these potato & chive waffles, because we all know that everyone loves potatoes and waffles!
I wanted to use Idaho® potatoes because that’s what I think of when I think of potatoes. Don’t you? Specifically I wanted to use their russet potatoes to make mashed potatoes first and then use the leftovers for my waffles. Did you know their russets have a lower moisture content and higher solids? That’s what makes your baked potatoes fluffier and your fries crisper and fuller. But when it comes to mashed potatoes, their russets have the best taste and consistent texture. So that’s why I wanted to use Idaho® potatoes.
Potato & Chive Waffles
I went their website to get some ideas for my appetizer and I was surprised to find how much I didn’t know about potatoes! For instance, did you know when you make mashed potatoes, that you are supposed to keep the skins on when you boil them? You peel them afterwards. I followed their instructions for mashed potatoes and they were delicious! There are a lot of great tips, so check their great how-to page. I can’t wait to tackle the perfect french fries next!
To make these delicious and easy potato & chive waffles, I started with making the mashed potatoes first the night before. I saved 1 cup before serving to use in the waffles the next day. The rest is just a matter of using eggs, cheese and chives and waffling them all up! I served them with a French onion dip on a platter and they looked great. The perfect finger food for a football party!
You know after visiting the Idaho® potatoes website I got a lot of ideas for other potato party dishes. How fun would a potato bar be? Or even a French fry bar? I love do it yourself toppings at parties. It’s fun for everyone. My husband had this idea for a potato, mushroom and steak appetizer that I will be posting soon. Potatoes are just a delicious and versatile food that you know everyone loves.

Potato & Chive Waffles Appetizer
Ingredients
- 2 eggs
- 1 cup mashed potatoes
- ½ cup mozzarella cheese shredded
- ½ cup cheddar cheese shredded
- ¼ cup grated Parmesan cheese
- 2 tablespoons chives minced
Instructions

In a large bowl, beat eggs and then add the potatoes, cheeses and chives.

Mix well.

Add a scoop of the mixture in the middle of the waffle maker and cook according to manufacturer’s suggestions. You may have to grease your waffle iron first but for my brand I did not have to.

This recipes made 12 medium sized waffles.

Serve with French onion dip.
