This beef kebabs marinade creates delicious and tender skewers of steak and along with the veggies a full meal on the grill. With the marinated beef cubes and veggies you have the perfect low carb dinner for a summer night. Marinate the steak in the morning, skewer and grill later so you can have dinner in a just 20 minutes.

This is one of my favorite summer dinners because I mix together the beef kebabs marinade, pour it into a baggie with steak cubes and dinner is well on the way. Come dinner time I skewer veggies and make the beef kebabs in 5 minutes and my hubby grills them to perfection.
I add the baby potatoes to the veggies for my husband, but I eat the steak and veggies for a low carb dinner for myself. It’s so good! Marinating the beef makes it tender and flavorful. And for me the colorful veggies add to my enjoyment of this meal. Plus it’s also high protein which as you know I’ve been striving for.
This marinated steak kebabs dinner on the barbecue was a hit with my family and one we eat a lot of in the summer time.
Recipe ingredients and substitutions.
I used simple ingredients for the marinade and it’s much like a salad dressing that make all the time. It’s a made up with balsamic vinegar, olive oil, fresh garlic cloves, rosemary, salt and ground black pepper.
- Beef Kebabs – I bought two ribeye steaks from Aldi but you can use a New York Strip or really any kind of beef cubes you want. However I would state that the better the cut of meat the more tender the final result. If you use a tougher cut of meat, make your beef cubes smaller in size. Maybe even marinate overnight to tenderize the tougher meat.
- Vegetables – We always have mushrooms with our steaks so I used those, red onions and peppers, zucchini from our garden and baby potatoes for my hubby and son. As I mentioned above you can skip the potatoes for a lower carb dinner. Also you can use whatever vegetables you like. I would have used grape or cherry tomatoes too if had any from our garden.
- Beef Marinade – I used balsamic vinegar because it has so much flavor but you could substitute with red wine vinegar or white wine vinegar. But if you have the balsamic use it. I also use fresh garlic because it adds lots of flavor. For the rosemary you can use fresh rosemary though I used dried. You could substitute with dried thyme if you want or even dried oregano or Italian seasoning.
How to make beef kebabs marinade.
As I mentioned above this marinade is very easy to make and dinner can be done in 20 minutes. FYI I prefer metal skewers to bamboo skewers but if you are familiar with bamboo that is fine.
Step 1: In the morning or night before, cut up the meat into uniform bite sized pieces. If you have a tougher cut of meat, make them a bit smaller. Place into a large resealable plastic bag.
Step 2: Get out a bowl and add all the marinade ingredients. Whisk together then pour over the meat cubes. Close the bag and mix the meat around with the marinade. Refrigerate all day or even overnight. The longer you are marinating the meat the better the flavor.
Step 3: When ready to eat cook the baby potatoes in the microwave for 3-4 minutes if using. When done, place in a large bowl with the other veggies you want to eat and toss with olive oil, fresh crushed garlic, salt and black pepper.
Step 4: Get out your skewers and thread the pieces of marinated beef onto them. Place the potatoes on their own skewer and the vegetables on their own skewers. This is good incase they take more or less time than the meat.
Step 5: Place all of the kebabs on the hot grill and cook for about 10-15 minutes. The potatoes should be done in 5-10 minutes because of precooking. And the veggies are done whenever you think they are done. I like mine a bit crunchy so they usually are done when the meat is done.
If you are not sure about the meat, slide the top piece off the skewer and cut into it and you will know if it’s done to your liking.
When done, take off all the meat and vegetables off the grill and place on a platter. You can then either serve them like that or take off the skewers and serve that way.
And that is all there is to it. You can add a green salad to make a complete meal but to use it’s great as is. Store leftovers in an airtight container. Please scroll down for the printable recipe card.
Good low carb vegetables to grill.
I personally love onions, bell peppers and mushrooms with my steak dinner. I also had some zucchini from the garden that went well. You can try some grape tomatoes, asparagus, cauliflower or even broccoli if you wish. Here are the carb counts for good low carb vegetables to try:
- ½ cup broccoli florets, raw = 1g net carbs
- ½ cup zucchini, raw = 2g net carbs
- ½ cup sweet or green bell peppers = 2.9g net carbs
- ½ cup onions = 6.1g net carbs
- 5 mushrooms = 2.0g net carbs
- ½ cup cauliflower = 1.5g net carbs
- ½ cup grape tomatoes = 2.4g net carbs
- 5 spears asparagus = 1.6g net carbs

Beef Kebabs Marinade Recipe
This beef kebabs marinade recipe is perfect for a summer dinner on the grill. It's a low carb high protein dinner that takes just 20 minutes to make.
Ingredients
- 2 pounds steak or beef cubes
- 2 tablespoons olive oil
- veggies cut into chunks (I used baby portobello mushrooms, onions, bell peppers, zucchini)
- baby potatoes (If low carb don't use)
- 1 clove of garlic, crushed
Beef Kebabs Marinade
- ¼ cup olive oil
- 2 tablespoons balsamic vinegear
- 1 clove garlic, crushed
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried rosemary
Instructions
- To make the marinade, add the marinade ingredients to a bowl and whisk well to combine.
- Take the steaks and cut into even sized cubes. If using a tougher cut of meat try to cut into small pieces. Please in a baggie and pour marinade over top. Mix well and set into the refrigerator to marinate over night or the morning of. The longer you marinade the better it would taste.
- When ready to eat, if using the baby potatoes, microwave for 3-4 minutes to precook them a bit. These are not low carb so elimate if on a low carb diet.
- Add the precooked potatoes and all the raw veggies (cut into uniform pieces) and place in a large bowl. Pour 2 tablespoons of olive oil, 1 clove of crushed garlic and season with salt and black pepper. Mix well to combine.
- Skewer the potatoes and meat on separate skewers as grilling time may vary. The other veggies can be mixed together and skewered.
- Heat up the grill. When hot, place the skewers on top and grill the meat for about 10-15 minutes. THe potatoes may take less time and the veggies should come off when they are to your liking. YOu can always take a piece of meat off the end and cut into it to see if it's cooked to your liking.
- When done take off the grill and place on a platter and serve. You can also take all the food off the skewers and place on a big platter and serve as well. Store leftovers in an airtight container.
