During the summers my husband loves to have steaks on the grill. I like steak but it has to be nice and tender for me to enjoy it. So today I marinated 2 steaks and made them into kebabs and while I was at it, I made the whole dinner into kebabs so my husband could do all the cooking! The steak was so tasty and tender and with it we had grilled mushrooms, peppers, zucchini, onion and for my son mini potatoes. So this marinated steak kebabs dinner was a hit with everyone as well as a good low carb summer dinner.
Grilled Steak Marinade Recipe
The marinade is rather simple and very much like a salad dressing. As a matter of fact if you are in a hurry you could probably use a good bottled balsamic dressing. So the ingredients are balsamic vinegar, olive oil, garlic, rosemary, salt and pepper. Just whisk these ingredients together and place in a baggie with the steak. First cut the steak in cubes before adding to the baggie.
You can marinate this over night or doing it in the morning. Place it in the fridge and cut up your other vegetables.
Good Low Carb Vegetables To Grill
I personally love onions, peppers and mushrooms with my steak dinner. I also had some zucchini from the garden that went well. You can try some grape tomatoes, asparagus, cauliflower or even broccoli if you wish. Here are the carb counts for good low carb vegetables to try:
- ½ c broccoli florets, raw = 1g net carbs
- ½ c zucchini, raw = 2g net carbs
- ½ c bell peppers = 2.9g net carbs
- ½ c onions = 6.1g net carbs
- 5 mushrooms = 2.0g net carbs
- ½ c cauliflower = 1.5g net carbs
- ½ c grape tomatoes = 2.4g net carbs
- 5 spears asparagus = 1.6g net carbs
For the vegetables I skewered them and then brushed garlic oil over top and sprinkled salt and pepper. The garlic oil is just a clove or two of garlic crushed into some olive oil. I’ve used these skewers for years.
Marinated Steak Kebabs Dinner
One note about the potatoes. They are not low carb. I made them for my son and because I thought that they were cute. I found a bag of mini colored potatoes at Aldi and I cooked them for 4 minutes in the microwave before putting them on the grill. Again they are not low carb and my husband and I did not eat them. The nutrition for 1 serving of the marinated steak is:
307 cals / 24.1g fat / 1.1g carbs / 22.3g protein = 1.1g net carbs
Well I hope you like this as much as we did and one of the best things about this low carb recipe for the grill is that virtually no clean up!
Marinated Steak Kebabs Dinner (low carb dinner on the grill)
This marinated steak kebabs dinner is the perfect low carb dinner for a summer night. Marinate the steak in the morning, then just place everything on skewers and then your whole dinner is cooked on the grill.
Ingredients
- 2 lbs steak
- 2 tablespoons balsamic vinegear
- ¼ cup olive oil
- 1 cloves garlic
- ½ teaspoon salt
- 2/4 teaspoon pepper
- ½ teaspoon rosemary
- 2 tablespoons olive oil
- mushrooms
- zucchini
- onion
- peppers
Instructions

Add the balsamic vinegar, olive oil, garlic, salt, pepper and rosemary to a bowl and whisk well to combine.

Take the steaks and cut into even sized cubes. Please in a baggie and pour marinade over top. Mix well and set into the refrigerator to marinate over night or the morning of.

Skewer the meat and cook over the grill. About 10-15 minutes.

To make the vegetable kebabs, chop into pieces, skewer and then brush with a garlic oil.

Make a garlic oil by adding crushed garlic to olive oil and mix in a small bowl.

Grill the vegetables along with the meat. If making potatoes, first cook in the microwave for 4 minutes before grilling.
