These delicata fries are a delicious change of pace. They are a good lower carb substitute for potatoes.
I just recently discovered delicate squash ( you can read more about it here). I am so excited because it is simply delicious! It’s creamy and a bit sweet. Very much like a potato but with more flavor. The sweetness is not as sweet as a sweet potato, but maybe that of a butternut squash. So maybe it could be best described as tasting like a butternut squash with a potato consistency. Yeah that’s about right.
But unlike those hard to peel and cut butternut squashes, the delicata has a thin skin that you can eat! And unlike a potato it has much less carbs and calories. Nothing against potatoes but it’s nice to switch it up a bit now and then.
These fries are very easy to make. The skin is edible so all you have to do is cut it in half, scoop out the seeds and cut them into half rings. I tossed them with olive oil and salt and pepper but you could also try different spice combinations or Parmesan cheese. Then roast them for about 20 -30 minutes and you have a delicious and unusual side dish. Enjoy!
- 1 delicata squash
- olive oil
- salt & pepper
Preheat oven to 450.
Cut squash length wise and scoop out seeds.
Cut each half into rings. These will be your fries.
Toss with olive oil, salt and pepper. Or any other seasonings you like. I have a Thyme, Lemon and Bay Sea Salt grinder from Trader Joe's that was great with this.
Roast on a parchment paper covered cookie sheet for 20 minutes or desired level of brownness.
