I confess I am not all that into Halloween. Growning up and even now, we have no trick or treaters on our street. However it is such a fun holiday and I wanted to try to make something Halloween themed that was also low carb.
So today I present these low carb witch finger breadsticks. They’re made with fathead dough, basil and lots of garlic. Each tasty breadstick is 1.5g net carbs and you can use marinara sauce to dip in.
What Is Fathead Dough?
Fathead dough was created years ago and it’s basically a low carb bread alternative made mostly from cheese! That is what I used today. To be honest it does not taste like real bread but it is tasty! ย
Especially when you add something flavorful to it like the basil and garlic in this recipe. It’s also super easy to make as it only has mozzarella cheese, cream cheese, eggs and either coconut or almond flour. Let’s make some witch fingers shall we?
What To Use For Witch Fingernails?
In these pictures I used sliced almonds and you can sometimes get them at Aldi. They really looked the part but they were so thin it was hard to work with. In retrospect I wish I used some pumpkin seeds.
I buy these ones from Trader Joes and they are awesome … not too salty. They are the perfect shape and a bit more sturdy. Use whatever is easiest for you.
Low Carb Witch Finger Breadsticks Recipe
To make the fathead dough, start with mincing the garlic and fresh basil leaves. I did this in my mini food processor. It’s perfect for small batches like this.
Whiz the basil and garlic until finely minced. Then in a large bowl add the mozzarella cheese, cream cheese and the basil mixture. Microwave for 1 minute.
Take it out and mix well. In a separate bowl beat your eggs and mix in the coconut flour. Add that the dough and mix well. I had to get my hands in there to get it well combined.
Then break off pieces and form them into fingers. Place on a well sprayed cookie sheet. Press your “fingernails” into the breadsticks and place in the oven for 8-10 minutes until browned.
And that is all there is to it. And of course these are great to serve with some bright red marinara sauce. See my favorites below.

My Favorite Low Carb Marinara Sauces
I buy Specially Selected Premium Marinara sauce from Aldi all the time. It only has 5g net carbs per ยฝ cup of sauce and I’m at Aldi at least once a week.
I also love Rao’s Marinara and Aldi does carry it sometimes but I usually buy it at Costco as it’s cheaper. I love the flavor of this sauce and it’s pretty low carb. Any low carb marinara sauce will work though.
These low carb witch finger breadsticks were very tasty to me. I even froze some and I microwave them for when I want a snack. The basil and garlic give them a lot of flavor.
They don’t really need the marinara sauce to taste good so the nutritional value for 1 stick does not include the sauce but it does include the pumpkin seeds instead of the almonds. I imagine the almonds would be less carbs as you probably only use an almond or two in the whole recipe.

Ingredients
- 2 cups mozzarella cheese, shredded
- 2 tablespoons cream cheese
- 4 tablespoons coconut flour
- 2 eggs, beaten
- 4 cloves garlic, crushed
- 2 tablespoons fresh basil, minced
- marinara sauce, optional for dipping
- 12 almond slivers or pumpkin seeds (for fingernails)
Instructions
- Preheat oven to 400 degrees F.
- Stir well to make sure the cheeses are melted and then add in the flour and egg.
- Add mozzarella, cream cheese, crushed garlic and minced basil to a microwaveable bowl.
- Mix and then cook for 1 minute in the microwave.
- Stir well to make sure the cheeses are melted and then add in the flour and egg.
- Mix well by using your hands if you have to.
- Spray a cookie sheet with cooking spray. Break off pieces of the dough and roll into a long finger shape. Take a sliver of almond or pumpkin seed to make the fingernail. Continue with the rest of the dough.
- Bake for 8-10 minutes or until the dough begins to brown.
- Let cook and then eat.
