Recently I was in the mood for yogurt, which only happens a couple times a year. Anyway I bought a really thick greek yogurt and mixed it with a couple things and came up with this low carb chocolate soft serve ice cream.
It’s not quite ice cream but it is thicker than pudding and it’s been my go to sweet treat for awhile now. It only requires 3 ingredients and takes just 5 minutes and best of all it has only 4g net carbs!
What Kind Of Yogurt & Cocoa To Use
There are only 3 ingredients to this recipe but they are rather specific products. I used 5% fat Fage yogurt, Divine cocoa powder and Torani sugar free S’mores syrup.
The 5% Fage yogurt is the thickest I’ve found with the least amount of carbs. That is important to make it more like soft serve ice cream. The Divine cocoa powder has less carbs than most cocoa powder and of course I love Torani sugar free syrups. You could substitute the syrup with your favorite sweetener though.
Let’s Make This Keto Chocolate Soft Serve!
As promised this recipe takes less than 5 minutes to make. You just mix together all 3 ingredients and eat promptly.
You can freeze it for 30 minutes and mix half way through to make it even more like ice cream but I like to just eat it right away.
How Much Does This Make?
This recipe only makes 2, ½ cup servings. It’s very rich and creamy so it’s definitely satisfying but the yogurt does have a bit of carbs. So each serving has 4g net carbs.
I like to make two and place in these custard cups with lids pictured below. I would eat one and save the other for the next day.
What Other Flavors Can You Make?
The secret to this recipe is using some sort of powder to add flavor and to thicken it up a bit but you also need sweetener. Keeping that in mind you can go ahead a play around with the following ingredients.
- low carb protein powders, cocoa powder, peanut butter powder, sugar free drink mixes
- flavor extracts like mint, vanilla, lemon, orange, strawberry, etc
- sweetness can be liquid stevia, Torani sugar free syrups, or powdered sweeteners like Swerve sweetener
Recipe Tips & Notes
- You really need to use 5% Fage Yogurt as it’s the thickest yogurt I’ve found with the lowest carbs. The same goes with the Divine cocoa powder too.
- The basic recipe requires thick yogurt, some sort of powder flavoring to make it thicker and then a sweetener. See post for ideas on how to vary these things and come up with other flavors.
- You don’t need to freeze this but can eat it right away. If freezing to make it colder, just put in the freezer for 30 minutes, mixing halfway through. If you leave it in more than that it will get very hard.
- You can also just store in the refrigerator.
- This recipe makes 2 – ½ cup servings. I like to store one in these custard cups with lids.
- I used an icing bag to make it look like soft serve but you can just mix and eat.
The nutritional information for 1 serving is:
169 cals / 8.5g fat / 9.5g carbs / 5.5g fiber / 13g protein = 4g net carbs
