For a light and delicious snack or appetizer try these low carb high protein cucumber salmon bites. They have flavor of a California roll without the carbs and only take a few minutes to make. Using refreshing cucumber slices, creamy avocado, smoked salmon and a delicious spicy mayo sauce makes for a tasty mouthful with only 0.9 grams net carbs and 1.8 grams of protein.

These cucumber salmon bites are perfect for those who miss sushi on a low carb diet. It has the flavor and taste of a California roll without the rice and therefore without the carbs. It’s also high in protein because of the smoked salmon.
It’s a refreshing snack, light meal or even appetizer that you could take to a party. There is no cooking involved so you can make this keto cucumber snack in about 10 to 15 minutes. It’s topped with a spicy mayo sauce too which is delicious to me and I have a few ideas of how you can change this up as well.
Recipe ingredients and substitutions.
The simple ingredients I used for this dish are a seedless cucumber, smoked salmon, avocado, furikake seasoning and a spicy mayo sauce. The spicy mayo just uses mayonnaise, sriracha sauce, lime juice and sesame oil.
- Cucumber Slices and Avocado – I use a long seedless English cucumber for this dish because you can cut them on a slant and get a rather large surface area. It’s best when they don’t have big seeds in the middle but you can use whatever kind you want. Also the fresh avocado slices is necessary as that adds the California roll flavor.
- Furikake Seasoning – I just happen to have this Furikake seasoning mix on hand because my husband uses it on his sautéed shishito peppers (which is delicious). It’s a Japanese seasoning with seaweed, sesame seeds and other flavors that they use to season rice. I thought it add a good seaweed flavor you would have in a roll. However you can just buy seaweed sheets and chop it up to sprinkle on top or eliminate it if you don’t like that flavor.
- Smoked Salmon – I bought this at Costco but Aldi has it right now and it’s not really hard to find. If you do not like salmon you could try cooked shrimp or imitation crab – basically things they have in California rolls. But I really like the smoked salmon myself.
For the spicy mayo sauce I used mayonnaise, sriracha sauce, lime juice and sesame oil. You can get by if you don’t have the sesame oil but it does add quite a bit of flavor. You could substitute sriracha sauce with garlic chili sauce or even hot sauce but again the sriracha is best.
How to make cucumber salmon bites (keto).
Step 1: First make your spicy mayo by whisking together the mayo, sriracha, lime juice and sesame oil. Set aside or refrigerate until ready to use.
Note I used a little condiment squeeze bottle to drizzle over top and these are great to have on hand for appetizers or even for chocolate drizzles on desserts. I got mine at a cake decorating store but they have them on Amazon and I’m sure Walmart has them as well. You might even be able to find them at the Dollar Tree.
Step 2: Cut your cucumber slices which are the base of this snack. I like to cut them about ¼ inch thick so they are sturdy enough to hold everything and also on a diagonal to get the most surface area I can. Below is what mine look like when sliced. My seedless cucumber made 24 servings.
Step 3: Next plate the slices and then take small pieces of smoked salmon that will fit nicely on top. Slice the avocado and place on top of the salmon.
Step 4: Now if you are using a condiment squeeze bottle, spoon the spicy mayo in it and drizzle overtop all the bites and then sprinkle some of the Furikake seasoning on top. If you are just using seaweed sheets, cut them into confetti size pieces and sprinkle on top. In a pinch everything seasoning or bagel spice would work too.
Step 5: Lastly squeeze some fresh lime over all of the cucumber bites and serve. You can also serve the remaining spicy mayo sauce with these party bites.
Store leftover cucumber bites in an airtight container. This dish best eaten right away but it will keep for about a day in the refrigerator. You will only need 2 tablespoons of the spicy mayo to drizzle on top. Cover the extra with plastic wrap and refrigerate for a up to 7 days. This recipe made 9 tablespoons servings.

Variations and substitutions to try.
Instead of the Furikake seasoning and lime juice you can use some wasabi paste and soy sauce. Just smear a bit of wasabi on either the salmon or avocado slices and sprinkle the soy sauce on top. Or you can put both in a little ramekin and dip the cucumber in a mixture of the soy sauce and wasabi paste.

I really liked these keto smoked salmon cucumber bites because I was craving a California roll but wanted to keep the carbs down. The next I make this I might add some fresh garlic too as I love a garlic aioli flavor. However technically a spicy mayo doesn’t have fresh garlic in it.

Cucumber Salmon Bites (low carb, high protein)
The cucumber salmon bites are an easy and delicious snack lunch or even appetizer. They are also low carb, high in protein and take 15 minutes to make!
Ingredients
- 1 seedless cucumber
- 6 ounce smoked salmon
- 1 avocado, thinly sliced
- 1-2 tablespoons Furikake rice seasoning*
- 1 lime, juiced
Spicy Mayonnaise
- ½ cup mayonnaise
- 1 tablespoon sriracha sauce
- 1 teaspoon lime juice
- ½ teaspoon sesame oil
Instructions
- Get out a small bowl and mix the spicy mayo. This should make about 8-9 tablespoons of sauce but you only need 2 tablespoons for this recipe. You can use it as a dip to serve with these as an appetizer if you wish. Also I spooned this in a small condiment squeeze bottle so it's easy to drizzle on top. If you need to use a spoon to drizzle over the slices you might need to thin it with a teaspoon of water. Refrigerate until ready to use.
- Slice the seedless cucumber into thick, diagonal slices. I got 24 pieces out of my larger cucumber. Arrange on a plate or platter and set aside. Slice the avocado into thin slices and cut the smoked salmon into pieces. You will need as many slices of both as you have cucumbers.
- Lay a small piece of salmon on each piece of cucumber then add a thin slice of avocado. Drizzle a little of the spicy mayo over every piece of the salmon bites. I ended up using 2 tablespoons of the sauce. Then sprinkle some of the Furikake rice seasoning on top. I used 2 tablespoons.
- *Substitutes: If you don't have the Furikake seasoning you can cut up a sheet of seaweed into confetti size pieces on top with or without toasted sesame seeds if you have them. Or just eliminate it altogether.
You can also substitute with everything bagel spice or a splash of soy sauce and wasabi paste instead of the lime juice, spicy mayo and Furikake seasoning.
