I know I have a million of these cheese waffles on my site but guess what, I’ve got another one for you. I had some left over broccoli and decided to make these broccoli & cheddar low carb keto waffles for breakfast the next day. They were great! You only need a few ingredients and a few minutes and you have a tasty low carb breakfast, snack or lunch.

Yes I make these alot. They are nice because you can freeze or refrigerate them and just heat one up in the microwave for a minute or less. They make for a great low carb grab and go breakfast. My husband really likes them so that is why I make them so much. Here are few of my favorites.
Ingredients For These Low Carb Keto Waffles
Most low carb or keto waffles have some type of flour, be it almond flour or coconut flour. However with these savory waffles you don’t need any flour. Eggs and cheese are the base and then you can add in any flavoring you want such as bacon, ham, turkey, pepperoni, cauliflower, spinach, sausage or in this case broccoli.
Tips For Making These Cheese Waffles
- Make sure to grease your waffle iron first. I use this waffle iron and it doesn’t need much greasing but yours might. Check the manufacturers instructions to see. I often use coconut oil or butter after each waffle.
- Only make small waffles. Add the “batter” to the center of the waffle iron and just enough to make a small waffle. Too big and it will be difficult to get out.
- Don’t substitute the mozzarella cheese. The stringy factor in that cheese is what keeps it together well.
- If reheating, only microwave for 30 second intervals until heated through.
These are good on their own, but I dipped mine in some sour cream. If I had chives I would have added that to the sour cream.

Ingredients
- 2 eggs, beaten
- ½ cup mozzarella cheese, shredded
- ½ cup cheddar cheese, shredded
- 2 tablespoons Parmesan cheese, grated
- ½ teaspoon onion powder
- ½ cup broccoli, cooked and finely chopped
Instructions

Heat up waffle iron according to manufacturer's instruction. You may need to grease before using. I like to do so before each waffle.

Mix together the ingredients and when the iron is hot, add a good spoonful to the center of the iron. Make sure to keep them small so they are easy to get out when done.

Eat immediately or freeze for later. To warm from frozen, just microwave for 30 second intervals until heated through.
