Just about everyone I know loves deviled eggs… except my hubby and son. Therefore when I make deviled eggs I’m the only one eating them so I make sure they are good!  I came up with these pepperoni pizza flavored deviled eggs and tried them a few days early. They are so good and only 0.6g net carb per egg. (I’m all ready for batch number 2!) These make for a great low carb or keto snack.

How I hard boil eggs

I learned this method of boiling eggs from my mother and I find it works for me every time.

  1. Add the eggs to a sauce pan and fill to cover with cold water.
  2. Bring the pot to a boil and let boil for 5 minutes.
  3. Cover and turn off the heat and let sit for 15 minutes.
  4. Drain the water and cool the eggs with cold water.
  5. Peel the eggs under running water to help keep the shells from sticking. Start at the top or bottom where there is usually a pocket of air. You can usually grab that film layer next to the shell that helps it come of easily.

Using Leftover Easter Eggs For Deviled Eggs

There is only one problem with using dyed eggs. You might find that the egg whites absorb the coloring. That doesn’t bother me any but if you are taking them to a party or something you might want to use fresh eggs.

Ingredients For Pizza Flavored Deviled Eggs

This recipe only needs 6 ingredients to get that pizza flavor: mayonnaise, sun dried tomatoes, grated Parmesan cheese, pepperoni and heavy cream.

egg whites, pepperoni, grated cheese, sun dried tomatoes and yolks

A Note About Sun Dried Tomatoes

The reason I took a picture of my jar of sun dried tomatoes below is that this product has only has 1 net carb per 2 tablespoons. It says that it’s bruschetta but it’s really just chopped sun dried tomatoes packed in oil. It’s already chopped so you don’t need to do much with it.  It has to be this exact jar as their other jars has more carbs.

You can use any brand of sun dried tomatoes you want. As a matter of fact I have a post on how to make your own! But when buying sun dried tomaotes make sure to find the kind that has the least amount of carbs. Then again we are only using 1 tablespoon.

Easy Deviled Eggs Recipe

Start by adding the pepperoni and sun dried tomatoes to a food processor and pulse until they are well chopped. Slice your eggs in half. Scoop the egg yolks into the food processor and set the whites to the side. Add the mayo, cream and parmesan cheese to the food processor and pulse until smooth and creamy.

If you plan on piping the mixture onto the eggs, make sure you use a large tip. This is because the sun dried tomatoes and pepperoni can get stuck as they are being piped out. It can be done but be ready to pick them out.

Chop up a few extra pieces of pepperoni and sprinkle on top. Refrigerate until ready to eat.

These pizza flavored deviled eggs came out delicious! I’ve even made this without the pepperoni and it was awesome. I hope you like them as much as I did. The nutritional information for 1 egg is:

81 cals / 7.1g fat / 0.7g carbs / 0.1 fiber / 3.4g protein = 0.6g net carbs

This would be a great appetizer to surprise family when they may expect traditional deviled eggs. Easy and good!
