Well ladies and gentlemen this is my last infused alcohol for the summer….I think. We are off on our summer vacation next week with family and there is sure to be lots of food, lots of drinks and lots of laughter. I made up a batch of this Mojito Infused Vodka and another batch of my Strawberry Lime Tequila for the trip. I think everyone will like them and if they don’t, well, that just means more for me. 😉
Mojitos are traditionally made with rum but I’m more of a vodka person so I used vodka. You can of course use rum and I’m sure it will be quite tasty too. The other components of a traditional mojito is a simple syrup or white sugar, lime juice and mint. I didn’t want to make the simple syrup because…well you know why. I don’t want the carbs. So my answer was to use some of the leaves from a stevia plant that I bought for the first time this year. It is one of the coolest herbs I have ever grown. The leaves are super sweet and every once in awhile I would munch on one but I never used them in my drinks or cooking. Below you can see a picture of what the leaves look like. I also had some peppermint growing and used that in my infusion. Lastly I cut up a lime and used some lime peels. As I’ve mentioned in my previous infused alcohol posts (tea infusions, fruit & herb infusions, bloody mary infusions), I always use a middle shelf alcohol in my infusions. The better the vodka the better the end product, just like it’s better to use good wine in your cooking. However, I am frugal and settle for middle of the road vodka. After a few days of infusing, I remembered I had this Mint Julep tea and decided to add a bit of it. If you don’t have any mint tea, there is no need to get any. Any kind of mint that you have in your garden or grocery store will work. Alternatively if you can’t get your hands on any fresh mint, just use a bag or two of mint tea. After you add your vodka, seal, shake and set in a dark, cool place for a few days up to a week. Test after a few days and see if it needs longer. I like to drink my infusions on the rocks or with seltzer water. I’m thinking tonic water, ginger ale or ginger beer would be tasty too. Mojito Infused Vodka
- 1 quart size glass jar
- 1 small bunch of fresh mint leaves cleaned and dry
- 1 small bunch of fresh stevia leaves cleaned and dry
- 1 lime peel
- 1 lime sliced
- ½ bottle vodka
Make sure your jars are clean and dry.
Add your herbs to your jar and bruise with a long wooden spoon to release the some of their oils.
Add your limes and peels and cover the vodka.
Place your lid on the jar and set in a cool dry place.
Test after a few days to see if desired taste. Mine took a week but yours could take less or more time depending on your taste.
Strain and store in a glass bottle or jar.
Serve over ice or mix with seltzer or soda water.
