Recently I went away for the weekend with sister’s friends and one of them made this delicious cheese quiche for us. I loved it so today I made my version and made this keto crustless cottage cheese quiche for the blog.
I filled it with 3 kinds of cheeses and omitted the pie crust. I’ve been using cottage cheese in my egg dishes a lot over the last years because it gives them a fluffy and creamy texture and adds even more protein. The result is just delicious and I froze slices for a quick low carb high protein lunch or even dinner sometimes. So this is great for low carb meal planning.
It’s very easy to make and you can vary the flavors and even add meats or vegetables. I have some ideas for you below to do that too. Each slice of this gluten free, vegetarian quiche has just 3.7 grams of net carbs and 20.6 grams of protein.

Recipe ingredients and substitutions.
The simple ingredients I used was eggs, cottage cheese, parmesan cheese, cheddar cheese, Swiss & Gruyere cheese, garlic powder and green onions. I didn’t add salt because the cheeses can be salty however if you want to add some black pepper or even hot pepper flakes (which I love) you can add a sprinkle.
- cottage cheese – You can use any kind of cottage cheese you want for this dish. You can use low fat, small curd, large curd or any type. I love Good Culture brand because it has active cultures and it’s a bit lower carb however I bought everything from Aldi and uses their brand.
- Swiss & Gruyere cheese blend – I buy this at Aldi all the time and love the flavor of both cheeses together. However you can easily substitute with just Swiss cheese if that is easier.
- parmesan and cheddar cheese – Both of these cheeses add lots of flavor but of the both of them the parmesan adds the most. Try to use this but you can substitute with asiago cheese too. But the cheddar can be substituted with any kind of cheese you want. I like it because you can buy a sharp cheddar which is flavorful for me.
- green onions and garlic – I used green onions for flavor but you can easily substitute with chives. You can also try other fresh herbs like basil, thyme, parsley, etc. The garlic is also for flavor so I would keep this or use fresh garlic if you want.

How to make crustless cottage cheese quiche.
Step 1: Preheat oven to 350°F. Get out a glass pie dish and spray with nonstick cooking spray and set aside.
Step 2: Add the eggs, garlic powder and cottage cheese to a high speed blender or food processor and blend until smooth. Pour the egg mixture into a mixing bowl.
Note you could whisk everything together in a bowl but the cottage cheese will be chunky and not smooth. This won’t effect the taste at all so if that is easier just whisk everything instead of blending.

Step 3: To the mixing bowl add the green onions, parmesan cheese, and ½ cup each of the cheddar and swiss/gruyere cheese. Mix well and pour into the prepared baking dish. Top with the remains cheddar and Swiss cheeses.

Step 4: Place in the preheated oven and bake for 40 minutes until golden brown and cooked through. Let rest for 5 minutes then serve.

TIP: If you want to freeze this for a quick keto breakfast, just wrap individual pieces of the cottage cheese crustless quiche in plastic wrap and place the wrapped pieces in a ziplock bag. To reheat, cook for a minute or two in the microwave at 50% power or defrost in the refrigerator overnight.

Ways to make different flavors of keto quiche.
You can simple add to or substitute ingredients to make this recipe your own or change up the flavors.
- Add a protein like chopped cooked bacon, sausage or ham. You can use breakfast sausage or flavored sausage or even different ham like prosciutto, capicola ham, pancetta, etc.
- You can add different seasonings and fresh herbs. For instance try and Italian seasoning and fresh basil. Maybe add some sun-dried tomatoes and Italian cheeses. I like to add hot chili pepper flakes to most of my dishes.
- Add more vegetables to the dish like chopped broccoli, asparagus, bell peppers, onions, zucchini, mushrooms, grape tomatoes, etc. Also leafy greens like spinach, arugula, kale, Swiss chard would all be nice additions.
- Use different cheeses such as the Italian cheeses or Mexican cheeses. If you want to make a caprese quiche with fresh tomatoes, basil, and fresh mozzarella. This keto caprese omelet is very similar.

I personally love this crustless cottage cheese quiche and I hope you give it a try. Many times I work out before lunch and this has come in handy to have on hand. I just heat it up and add a small salad for a healthy low carb high protein meal. I can’t wait to try different flavors next time.

Crustless Cottage Cheese Quiche Recipe (low carb, high protein)
This keto crustless cottage cheese quich recipe is full of rich cheesy flavor and had a fluffy texture. It's an easy low carb high protein meal to have on hand if you freeze the slices for meal prep. Each slices has just 3.7g net carbs and 20.6 g protein.
Ingredients
- 6 eggs
- 1 cup cottage cheese
- 2 green onions, finely diced
- ½ teaspoon garlic powder
- ½ cup parmesan cheese, grated
- ¾ cup shredded Swiss & gruyere cheese **
- ¾ cup shredded cheddar cheese
Instructions
- ** I buy a Swiss & Gruyere cheese blend at Aldi however you can just use Swiss cheese if you don't have it.
- Preheat oven to 350°F. Spray a glass pie baking dish with nonstick cooking spray and set aside.
- Add the cottage cheese, eggs and garlic powder to a high speed blender or food processor. Process until will combined. Pour into a mixing bowl.
- Add to the bowl the green onions, parmesan cheese and half cup each of the swiss/gruyere cheese and cheddar cheese. Mix well and pour into the prepared pie dish.
- Top with the remaining ¼ cup of both the swiss/gruyere and cheddar cheeses. Place in the oven and bake for 40 minutes or until golden brown and cooked through. Let rest for a few minutes to cool and set.
- Store leftover crustless quiche in an airtight container. You can also wrap individual slices in plastic wrap and freeze to eat another day.
Notes
You can easily add anything to this cheesy quiche. Tried finely diced broccoli, asparagus, bell peppers, mushrooms, spinach, ham, bacon, breakfast sausage etc. You can also try different cheeses or spices to change up the flavor. See post for more ideas.
