Ingredients

Fried Pork Chops Strips (8 servings 2oz each)

  • 1 lb Smithfield All Natural Boneless Pork Chops
  • 1 ¾ oz pork rinds (about ½ cup when ground and crushed)
  • ½ cup Parmesan cheese, grated
  • ¼ cup mayonnaise

Easy Roasted Garlic Dipping Sauce (20 servings 1T each)

  • 1 cup mayonnaise
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 1 tablespoon lemon juice
  • 1 teaspoon dijon mustard
  • 2 tablespoons Parmesan cheese, grated

Instructions

Breading the Pork Strips

  1. Crush the pork rinds by placing them in a food processor and pulsing until they look like bread crumbs. Mix the crushed pork rinds with parmesan cheese and place in a large shallow bowl

  2. Place the mayo in a small baggie. Add the pork strips to the baggie in groups and squish them around to get the mayo all over them. Then place them in the pork rind mixture and and coat with the breading. Continue until all the strips are done.

  3. Spray the basket of the air fryer with oil and place the strips in the basket of the air fryer or follow the instructions below if cooking on the stove.

Making the Pork Strips in the AIr Fryer

  1. Simply place the breaded strips in the basket of the air fryer. Set the temperature to 380°F for 10 minutes and then turn it up to 400°F for 5 minute or desired crispiness. You may have to do these in batches.

Making the Pork Strips on the Stove

  1. In a large skillet heat up some oil to a medium high temperature. Place the pork chops strips in the hot oil and cook for a few minutes until nice and brown. Flip them over to do the other side. You may have to do these in batches.

I was not happy with the results in the oven as the breading did not stick as well and they didn't get as crispy so I would suggest on the stove if you do not have an air fryer. I baked them at 400°F for 15 minutes.

Easy Roasted Garlic Dipping Sauce

  1. Just add the crushed garlic to a little olive oil and microwave for 1 minute. It should look browned but not burnt. Then mix it with the mayo, dijon mustard, lemon juice and Parmesan cheese.
