KETO TUSCAN CHICKEN THIGHS

Just a few ingredients and you can make this flavorful chicken dinner in under 25 minutes.

INGREDIENTS • olive oil • salt & black pepper • chicken thighs • artichoke quarters • artichoke salad • capers & sun dried tomatoes

Heat up large pot and add olive oil.  Season chicken with salt and pepper. Place thighs in pot and then brown both sides.

 Add the jars of artichokes and artichoke salad along with the liquid, capers and sun dried tomatoes to the pan.

Cover with lid and cook on medium heat for 15 minutes or until the chicken completely cooked through.

To keep this dinner recipe low carb, eat over cauliflower rice or zucchini noodles. If you don't care about carbs try a wide pasta noodle.
