Ingredients

  • 3-4 pounds beef short ribs (about 6 nice beef ribs)
  • 1 teaspoon paprika
  • 1 tablespoons Swerve brown sweetener (can also sub with regular brown sugar)
  • 2 teaspoons chili powder
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 2 teaspoons salt
  • 1 teaspoon cumin
  • ½ teaspoon black pepper

Instructions

  1. Note the timing on this recipe will vary depending on your smoker and the size of your ribs. Ours have taken anywhere from 3 hours and up to 5 hours. If you have a meat thermometer you want them to be 203°F when finished.

  2. Take out the ribs and let come to room temperature about ½ hour before you want to cook them.

  3. In a small bowl add all the seasonings and mix together. Then rub the spice mixture all over the ribs.

  4. Heat the smoker up to 275°F. When ready to cook, place on the grill grate of the smoker. Cook the ribs for about 3-5 hours until the internal temperature is 203°F when using a meat thermometer. Let rest for 5 minutes before serving.

Recipe Notes

Note this is an estimate based on the size and amount of the meat.

The nutrition for 1 short rib is: 323 cals / 28.1g fat / 2.2g carbs / 0.4g fiber / 14.4g protein = 1.8g net carbs
