
This bbq smoked short ribs recipe is the best tasting ribs I have ever had and they are low carb! Each meaty rib has only 1.8g net carbs!
Note the timing on this recipe will vary depending on your smoker and the size of your ribs. Ours have taken anywhere from 3 hours and up to 5 hours. If you have a meat thermometer you want them to be 203°F when finished.
Take out the ribs and let come to room temperature about ½ hour before you want to cook them.
In a small bowl add all the seasonings and mix together. Then rub the spice mixture all over the ribs.
Heat the smoker up to 275°F. When ready to cook, place on the grill grate of the smoker. Cook the ribs for about 3-5 hours until the internal temperature is 203°F when using a meat thermometer. Let rest for 5 minutes before serving.
