
This slow cooker smoked pulled pork will make you feel like you are at a summer barbecue in winter! Spicy, crusty chunks of barbecue pork also taste delicious on a sandwich or salad the next day. Best of all it's a great low carb high protein dinner.
Add the spices and liquid smoke to a small bowl. Mix to make a paste and rub all over the pork roast. You can taste the rub first if you want to make sure it's smokey enough for you.
Set in the slow cooker for 5-6 hours on high without any liquid. The roast should be tender when you take it out.
Preheat the oven to 425°F. Get out a baking sheet and cover with foil. Spray the foil with nonstick cooking spray. Place the roast on the baking sheet and bake 25 minutes until brown and crusty.
Take out of oven and chop into chunks or shred. Serve with bbq sauce on the side or eat as is. Store leftover pulled pork in an airtight container.
