Okra and Tomatoes with Beans Recipe

This okra and tomatoes with beans recipe makes a hearty and tasty side dish. Or serve over rice to make a delicious vegetarian dinner.

Ingredients

  • 4 cups okra fresh, stems cleaned
  • 2 cups cherry or grape tomatoes
  • 2 tablespoons olive oil
  • ½ teaspoon Italian seasoning
  • 4 cloves garlic, crushed
  • 1 lemon, sliced
  • 1 can cannellini beans drained and rinsed
  • salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F. Spray a baking dish with nonstick cooking spray.

  2. Add the okra, tomatoes crushed garlic, seasoning, salt and black pepper to the baking dish. Then pour the olive oil over top and mix well to combine.

  3. Spread evenly in the baking dish and then top with lemon slices. Place in the preheated oven and bake for 30 minutes.

  4. Pull out of the oven and add the beans. Mix well and place back in the oven. Bake for 20 minutes more.

  5. When finished you can take out the lemons or keep them in. Lemon peels are actually edible but if you want them you can throw them away.

  6. Serve as is for a side dish or over rice to make a nice vegetarian meal. Store leftovers in an airtight container.
