Keto Salami Bites Recipe

This keto salami bites recipe with avocado and tomatoes is a super easy but delicious low carb snack, lunch or appetizer. With just 3 simple ingredients and about 15 minutes you can whip this low carb high protein recipe. Each has only 0.9 grams net carbs and 2.4 grams protein.

Ingredients

  • 12 slices hard salami
  • 1 avocado, chopped
  • ½ cup grape tomatoes, chopped sliced in half

Instructions

  1. Preheat oven to 375°F. Spray a muffin tin with nonstick cooking spray and set aside.

  2. Cut two slits in the salami slices at the top and bottom. Then take the slices and place in the muffin tin. The cuts will help you form a cup by overlapping at the top.

  3. Bake for 10-15 minutes, checking after 10 minutes to see if they are brown and crispy but not burnt. Take out and let cool before adding toppings.

  4. While those are baking, chop up the tomatoes and avocado. The when the cups have cooled fill with the toppings and serve.

  5. Note the cups will not be crispy if you have leftovers. If you have leftover cups you can crisp them back up in the oven or air fryer for a few minutes but you won't want the tomatoes and avocado to be in them.

More topping ideas or to make more of an appetizer.

  • Try chopped fresh herbs like cilantro, basil or parsley to dress them up a bit.
  • Try adding crumbled cheeses such as goat cheese, feta or blue cheese. Also fresh mozzarella balls and basil leaves would be delicious.
  • A flavorful herb cream cheese would be good too with finely chopped vegetables.
  • Go for an antipasto flavor with diced cheeses, artichoke hearts, onion, olives, roasted peppers, fresh basil, etc.
  • For Mexican flavors try a dollop of sour cream, cheddar cheese, tomatoes, avocado and green onions.
  • Cooked shrimp goes great with these BLT flavors.
