High Protein Chia Pudding Recipe (Burnt Almond Torte)

Try this high protein chia pudding recipe which has the flavor of a delicious burnt almond torte dessert. Sugared almonds, creamy topping and that almond flavored chia pudding make for a delicious low carb dessert with only 2.9g net carbs and 10.8g protein!

Ingredients

Chia Pudding

  • ¼ cup chia seeds
  • 1 scoop vanilla protein powder (see notes)
  • 1 cup unsweetened almond milk
  • 2-4 teaspoons almond extract (see notes, I liked 4 but my hubby liked 2)
  • 2 tablespoons Torani sugar free S'mores syrup (see notes)
  • 8 tablespoons whipping cream (about 2 T each from canister whipped cream)

Sugared Almonds

  • ½ cup sliced almonds, raw
  • 2 tablespoons Swerve sweetener

Instructions

To make the chia pudding

  1. In a bowl, mix the chia seeds, protein powder, almond milk, 2 tablespoons of s'mores syrup and 2-4 teaspoons of almond extract. Taste and see if you want more extract or syrup. I thought these amounts were good for me and I used 4 teaspoons of extract. However my husband liked only 2teaspoons so start with 2 teaspoons and add more if you think it needs it. Place in the refrigerator for at least 2 hours.

To make the sugared almonds

  1. in a nonstick saute pan, add the sliced almonds and sweetener. Mix until the sugar melts and coats the almonds and they turn golden brown. This should take 5 minutes or so. Make sure to watch as they burn easily.

  2. When done, spread out on parchment paper and let air dry.

Assembling the chia pudding

  1. Divide the pudding to 4 containers, top with whipped cream (about 2 tablespoons each) and then place some of the sugared almonds at the end. Refrigerate until ready to eat.

Recipe Notes

NOTES*

  • If you don't have sugar free S'mores syrup you can use some kind of sweetener like Swerve. However the S'mores adds really good flavor.
  • I used Isopure Zerocarb vanilla protein powder because it 0 net carbs per serving. If you don't have this use any kind of vanilla protein powder This thickens and adds flavor to the pudding as well as protein.
