Curried Coleslaw Recipe (low carb)

This radish and cabbage curried coleslaw is a tasty change of pace from your usual coleslaw. With the sweet, spicy and creamy dressing and colorful crunchy veggies, it's a hearty summer side dish or salad. Each serving has only 3.2g net carbs per serving.

Ingredients

  • 4 cups raw cabbage, thinly sliced
  • 3-4 large radishes, thinly sliced
  • ½ cup red onion, thinly sliced
  • 1 tablespoon water
  • 1 tablespoon apple cider vinegar
  • ½ cup mayonnaise
  • 2 teaspoons curry powder
  • 1 teaspoon Swerve sweetener
  • salt and black pepper to taste (optional)

Instructions

  1. Slice the cabbage, onion and radish very thinly and place in a large bowl. Mix together and set aside.

  2. In a medium size bowl add the water, vinegar, mayonnaise, curry powder and sweetener. Whisk together and then taste test. If you want more curry powder add another sprinkle or ½ teaspoon. You can also play with sweetness. If you want a bit more heat, you can add ¼ teaspoon of cayenne powder or sprinkle some hot pepper flakes. Use small amounts when adjusting the taste.

  3. Add the dressing to the vegetables and mix well to combine.

  4. Refrigerate for a few hours before eating. Store leftovers in an airtight container.
