
This radish and cabbage curried coleslaw is a tasty change of pace from your usual coleslaw. With the sweet, spicy and creamy dressing and colorful crunchy veggies, it's a hearty summer side dish or salad. Each serving has only 3.2g net carbs per serving.
Slice the cabbage, onion and radish very thinly and place in a large bowl. Mix together and set aside.
In a medium size bowl add the water, vinegar, mayonnaise, curry powder and sweetener. Whisk together and then taste test. If you want more curry powder add another sprinkle or ½ teaspoon. You can also play with sweetness. If you want a bit more heat, you can add ¼ teaspoon of cayenne powder or sprinkle some hot pepper flakes. Use small amounts when adjusting the taste.
Add the dressing to the vegetables and mix well to combine.
Refrigerate for a few hours before eating. Store leftovers in an airtight container.
