Ingredients

  • 2 zucchinis made into noodles
  • 1 tablespoon olive oil
  • 2 cloves garlic, crushed
  • ¼ cup sun dried tomatoes, chopped
  • 2 tablespoons fresh basil, finely chopped
  • 4 ounces cream cheese
  • ¼ teaspoon salt
  • 2 tablespoons heavy cream
  • ¼ teaspoon pepper

Instructions

  1. Using a spiralizer or peeler, make your zucchinis into noodles.
  2. Place the noodles in a microwave safe dish and cook for 2 minutes.

  3. In the meantime, add olive oil and crushed garlic to a saute pan and cook for a minute or two.

  4. Then add cream cheese and heavy cream and stir well until the cream cheese has melted and mixed in well with the heavy cream.

  5. Next add the sun dried tomatoes and spices and mix well.

  6. Lastly add the zucchini noodles and cook for 1 minute longer.

  7. Take off the stove and mix in the minced fresh basil.

The nutritional information for 1 serving is 367 calories / 31.2g fat / 13.3g carbs / 2.9g fiber / 7.9g protein = 10.4g net carbs

This sauce is pretty creamy but if you want to sprinkle some fresh parmesan cheese at the end you could do so. Also if you want to add some heat, sprinkle some hot pepper flakes. And lastly if you want to add some meat try some cooked chicken or shrimp.

You can also use this sauce recipe with regular pasta if you don't care about carbs. You can even add some fresh spinach to it for color and nutrition. Just add the fresh chopped spinach at the end of making the sauce and stir until it wilts.
