Bruschetta Salad Recipe with Grilled Chicken (Low Carb)

This bruschetta salad recipe with grilled chicken is another low carb dish that uses all those ripe tomatoes from your garden. The best thing is that it can easily be made in minutes!

Ingredients

  • 1 cup tightly packed salad greens, romaine or spring mix
  • ¼ cup red onion slices
  • 1 cup fresh tomatoes, diced (Roma, grape or cherry tomatoes)
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 small clove garlic, crushed
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried thyme
  • ½ cup cooked grilled chicken (about 4 ounces)
  • ¼ cup fresh grated parmesan or asiago cheese
  • ¼ cup cucumber slices (optional)

Instructions

  1. Chop the fresh tomato and sprinkle with salt and pepper. Mix and let sit for a few minutes.

  2. Add the greens to a salad bowl.

  3. Mix in your red onion and cucumber if using.

  4. In a small bowl add 2 tablespoons of the tomato juices from the chopped tomatoes. Then mix in the olive oil, crushed garlic, thyme and vinegar.

  5. Pour the dressing over the greens and mix well. Then top with the chopped chicken, tomatoes and lastly sprinkle shredded cheese on top.
