Ingredients

  • 3 cups zucchini noodles
  • 2 cloves garlic, minced
  • 1 cup Roma tomatoes, chopped
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • 4 oz fresh mozzarella, shredded
  • hot pepper flakes (optional)
  • 2 tablespoons fresh basil, minced

Instructions

  1. In a large saute pan, heat up the oil and then add the garlic and tomatoes. Sauce for a minute or two until the garlic is fragrant.

  2. Add in the zucchini and mix well. Sprinkle the salt and mix again. Cook for 5 minutes or zucchini is done to your liking. I like mine al dente so that only takes a few minutes.

  3. Add in the fresh mozzarella and mix until all is melted. Take off stove, mix in fresh basil and serve.
