If you are looking for a quick and easy low carb lunch, look no further. These zucchini noodles Margherita can be made in minutes and are full of flavor. Using fresh garlic, basil and mozzarella, these zucchini noodles will be sure to satisfy your pasta cravings.
In a large saute pan, heat up the oil and then add the garlic and tomatoes. Sauce for a minute or two until the garlic is fragrant.
Add in the zucchini and mix well. Sprinkle the salt and mix again. Cook for 5 minutes or zucchini is done to your liking. I like mine al dente so that only takes a few minutes.
Add in the fresh mozzarella and mix until all is melted. Take off stove, mix in fresh basil and serve.
