EASY INSTANT POT LEG OF LAMB

You can easily make a leg of lamb in the Instant Pot in just an hour or two. Seasoned with garlic and rosemary for a naturally low carb dinner!

The piece of lamb I bought was roughly a 4 lb boneless leg of lamb roast. This easily served 6 people.

Cut slits into the roast and stuff with garlic slivers. Mix rosemary, salt & pepper with olive oil and rub into the roast. Place in a baggie and refrigerate over night.

Using the saute function brown the roast for a few minutes on each side. Take out of pot and add a little water to scrape up the brown bits.

Put roast back in and manual cook for 50 minutes. Cancel then quick release the pressure and add in the vegetables. Manually cook for 10 more minutes

Let the pressure come down naturally and place the lamb and vegetables on a big platter. The lamb should be tender and delicious!
