The strawberry cheesecake bites are a little bit of low carb heaven. They taste like strawberry pretzel salad rolled up in one low carb bite. Only a few ingredients needed to make these and they are only 1.7g net carbs per bite!
In a skillet, melt butter and sprinkle salt over pecans and toast. Place in a bowl and let cool.
Add pudding mix and heavy whipping cream to a mixing bowl and beat on high until thick and creamy.
Mix in strawberries and set in the refrigerator for ½ hour.
Take out of refrigerator and using a spoon take a scoop out of the cheesecake mixture and loosely make a ball shape. Roll around in pecans and set on a plate. Do this with the rest of the mixture.
Set plate in the freezer for 15 minutes to firm up and then store in the refrigerator.
