This chunky greek guacamole is a great low carb dip to take to a party or just add to your next Mexican feast. Briny olive, salty cheese, sweet tomatoes all wrapped up in creamy avocados. One serving is just 3.6g net carbs.
Add feta, tomatoes, olives, chopped avocados and parsley to a large bowl and mix carefully.
Add lemon juice and zest and gently mix with avocado.
Lastly mix in good olive oil.
If eating later, tamp down plastic wrap to the surface of the guacamole to prevent browning and refrigerate until ready to use.
