Try this Mexican whole roasted cauliflower and you will want to eat it all the time. The cauliflower just melts in your mouth and the spices give it an extra kick and only 4.4g net carbs per serving.

Ingredients

  • 1 head cauliflower
  • ¼ cup olive oil
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ¼ teaspoon onion powder
  • ½ teaspoon chili powder

Instructions

  1. Preheat oven to 375 degrees F.

  2. Cut out core of cauliflower and take off the leaves. Place in a cast iron or oven proof skillet.

  3. Mix spices into the oil and brush all over cauliflower head.

  4. Cover the cauliflower with aluminum foil and bake for 30 minutes.

  5. Take off foil and cook for 1 hour more until cauliflower is fork tender and brown all over.
