Ingredients
3clovesof garlic
zest and juice of 1 orange
1lemon juiced
¼cuplime juice
¼cupolive oil
¼cupcilantro leavestightly packed
1Tablespoonfresh mint leaves
2Tablespoonsfresh parsley
1cuptomatoeschopped
2cupsof corn
1cupred onionchopped
1cupbell pepperschopped
1cupzucchini chopped
1cupgreen beans chopped
2jalapeñoschopped
Instructions
For the dressing, add the garlic, zest, juice, olive oil and herbs to a food processor and blend for a minute.
Chop all vegetables into bite size pieces and add to a large bowl.
