Golden Beet Noodles Recipe

These golden beet noodles with pine nuts & goat cheese are so tasty you won't realize you are eating veggie noodles! And it takes less that 20 minutes to make this gluten free, vegetarian dish! Easy, healthy, tasty.

Ingredients

  • 4 small golden beets, peeled and made into noodles
  • 2 cloves garlic, crushed
  • 1 tablespoon olive oil, extra virgin
  • ½ teaspoon rosemary, dried
  • ¼ cup goat cheese crumbles
  • 2 tablespoons pine nuts, toasted

Instructions

  1. Preheat the oven to 400° F. Spray a rimmed baking sheet with nonstick cooking spray.

  2. Peel beets and then using a spiralizer or peeler, make into noodles. Toss them with olive oil, garlic and rosemary.

  3. Spread out in a single layer on the prepared sheet and place in the oven. Roast for 10-15 minutes or desired texture. I like mine a little chewy but you might like them softer.

  4. Meanwhile add pine nuts to a dry skillet and toast over medium low heat. Stir as they toast and take them off when they are golden brown. Make sure to watch so they don't burn. Pour onto a paper towel or plate to cool. Don't leave them in the hot pan or they will continue to brown.

  5. Take the baking sheet out of oven and plate the noodles. Add goat cheese crumbles and toasted pine nuts on top then serve. Store leftovers in an airtight container. This can be served as a main dish or side dish.
