Easy Dinner Rolls

Ingredients

  • ¼ cup luke warm water
  • 1 cup warm milk
  • 1 packet fast rising yeast
  • 2 eggs beaten
  • 2 Tablespoons butter melted and divided
  • 2 Tablespoons sugar
  • 1 ½ teaspoons salt
  • 20 ounces flour Or approx. 4 ½ cups

Instructions

  1. Combine water, milk, yeast, sugar, salt, eggs and butter in the bowl of your mixer. Add 2 cups of flour and mix by hand with a wooden spoon until it's well combined.
  2. Add bread hook to mixer and set to medium as you slowly add the rest of the flour. Then increase speed to medium high and knead doug for about 5 minutes.
  3. Dough should be soft and smooth; elastic and tacky to the touch. Mine was a bit to sticky so I add 1 T of flour and mixed again. This is something that I think you need to learn from experience.
  4. Spray a clean bowl with cooking spray and place dough in bowl and roll around to oiled on all sides. Cover with plastic wrap and leave out for about 1 hour so that it's doubled in size.
  5. Cut dough into 12 pieces and form into rolls. Place each in a greased 13 x 9 cooking dish. Brush remaining melted butter on top and then cover dish with plastic. Let sit for 30 minutes.
  6. Preheat oven to 375 degrees. Once rolls have set, place in oven and cook for 15-20 minutes. Should be brown on top.
