Ingredients

  • Lemony Tahini Dressing
  • 1/2 cup avocado oil can substitute olive oil
  • 1/2 cup lemon juice
  • 1/4 cup yeast flakes
  • 1/2 cup tahini
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon curry powder
  • 2 cloves of garlic
  • zest of 1/4 of a lemon
  • Kale Salad
  • 4 cups baby kale leaves
  • 1/2 red onion sliced
  • 1 cup of chickpeas
  • 2 chicken breasts cooked and sliced
  • sunflower seeds or pepitas to garnish optional

Instructions

  1. For the dressing:
  2. Add all ingredients to a food processor and blend on high.
  3. Store in the refrigerator for 1-2 weeks.
  4. For the salad:
  5. Arrange kale, onions, chickpeas on a plate and spoon dressing over top.
  6. Garnish with sunflower seeds or pepitas (pumpkin seed kernels) if you wish.
