This cinnamon apple breakfast bread is moist, sweet and full flavor. No one would know it was gluten free.

Ingredients

  • 1/2 cup coconut flour
  • 1 1/2 cup almond flour
  • 1/2 cup Swerve
  • 1/2 cup coconut sugar
  • 1 teaspoon baking soda
  • 2 Tablespoons cinnamon
  • 5 eggs
  • 1 cup applesauce

Instructions

  1. Preheat oven to 350 degree F.
  2. In a large bowl, mix the coconut flour, almond flour, Swerve, coconut sugar, cinnamon and baking soda.
  3. In a separate bowl, beat the eggs and mix in the apple sauce.
  4. Add the egg mixture to the flour mixture and mix well.
  5. Pour into a greased bread pan.
  6. Bake for 50 - 55 minutes or until a knife comes out clean from the center. Start checking at 45 minutes as oven temperatures vary.
  7. Let cool for 15 minutes before eating.
