Just 2 minutes of cooking and you have a healthy, tasty baked oatmeal cup to start your day. 

Using healthy ingredients like pumpkin puree, egg, oats, almond milk, spices, flaxseed and baking powder.

Add all the ingredients to a high speed blender or food processor and then blend on high until nice and smooth.

Pour equal amounts of mixture into 4 ramekins. If not eating today cover and refrigerate until ready to eat.

Add to microwave and cook for  2-3 minutes and the power level to 50%. The power level keeps it  from drying out.

If the top is loose or comes off on your finger if you touch it, it’s not done. Microwave it for 10 seconds until done.

I prefer my baked oatmeal to be more underdone than overdone. It’s more like a muffin if it’s overcooked. So monitor accordingly.
