This was my mom's recipe and a family favorite dinner growing up in Pittsburgh PA. It's easy to make and the crazy thing is that it doesn’t have any chicken in it!

All you need is: •  pork or veal pieces cubes • eggs • bread crumbs • paprika • Parmesan cheese • oil to brown in

True city chicken is usually made with pork and veal and not chicken. However sometimes I just use boneless country pork ribs because it’s cheaper and easier to find.

Cut the pork into cubes and place on wooden skewers.  Then dip the pork skewers in a beaten egg and then seasoned bread crumbs.

Heat skillet and add oil. Once the oil is hot, place your meat in the pan. Brown skewered meat on all sides. About 2-3 minutes on each side.

Once the meat is browned, place in a baking dish and cover with aluminum foil. Bake for 20 minutes or until the pork is no longer pink inside.

You can make a gravy with the drippings in the skillet. Add some broth and a little flour and whisk.
