This is a quick low carb zucchini snack that you can make in just a few minutes.Tasty and filling.Remember this summer when just about every post I wrote was about zucchini? Even I got sick of zucchini by August but since it’s been awhile and I found this post I started but never finished, I thought I’d offer up this low carb snack I made this past summer. It’s quick and easy and tasty too. This makes a nice snack or a quick lunch for those of you who are watching your carbs and even if you aren’t it’s still quite tasty.
The first thing you want to do is cut your zucchini into rounds. Try to make them into pairs of the same size and place on a parchment covered  cookie sheet. On one slice, sprinkle with Parmesan cheese and on the other, layer some thin sliced ham and shredded cheese of your choice. I used habanero havarti for mine. All of these items I got at Aldi by the way, even the habanero havarti cheese.
Place under the broil for about 5 minutes until the cheese is brown and melted. Take them out of the oven and make into little ham and cheese zucchini sandwich bites.
So as the new year approaches if and you might be making resolutions or starting a new diet, these are an easy lunch or snack for you to try.

Zucchini Ham & Cheese Bites (GF, Low Carb, Paleo)
Ingredients
- 14 slices of zucchini
- 7 thin slices of ham
- ½ cup shredded cheese of choice I used habanero havarti
- 2 Tablespoons grated parmesan cheese
Instructions

Place your slices of zucchini on a cookie sheet.

Every other slice, top with ham and shredded cheese.

On the other slices, add a bit of grated cheese.

Broil for 5 minutes or until cheese is melted and browned a bit.

Use the grated cheese slices to top the ham slices and eat immediately.
