Easy Baked Nut Crusted Salmon

Ingredients

  • 2 lbs salmon filets or whole fish
  • 1 tablespoon parsley
  • 2 cloves garlic
  • 1 zest of lemon
  • 2 tablespoons parmesan cheese, grated
  • ½ cup roasted hazelnuts
  • 4 tablespoons butter, melted

Instructions

  1. Preaheat oven to 425°F. Spray a cookie sheet with cooking spray and set aside.

  2. If you buy a whole salmon and you want to pre cut your salmon into filets do that now. Or you can keep it whole. Either way, place your salmon on the cookie sheet skin side down.

  3. In a food processor add the parsely and garlic and pulse until finely chopped. Then add in the hazelnut and process until the nuts are all chopped.

  4. Pour the nut mixture into a bowl and mix in the lemon zest, parmesan cheese and melted butter.

  5. Take the nut mixture and carefully spoon over salmon and press down to make it stick to the fish.

  6. Bake for 8-10 minutes depending on the thickness of your salmon. Rule of thumb is 4-6 minutes per ½ inch of thickness where the 4 minutes will be a bit rare and 6 minutes cooked through. Mine was roughly 1 inch thick and took 10 minutes.

  7. Let set for 5 minutes before eating.
