Low Carb Peanut Butter Cookies with Chocolate Chips

If you are like me and love chocolate peanut butter anything, try these low carb peanut butter cookies with chocolate chips. With only a few ingredients you have a keto snack cookie that is gluten free and flourless too! Each cookie has only 1.2g net carbs and 57 cals.

Ingredients

  • 4 oz cream cheese
  • cup Swerve sweetener, confectioners
  • 1 egg beaten
  • 1 teaspoon baking powder
  • ¼ cup peanut butter powder
  • 2 tablespoons peanut butter (no sugar added)
  • 120 Lily's sugar free mini chcoolate chips (roughly 3 tablespoons)

Instructions

  1. Preheat oven to 350°F.

  2. Using a hand mixer, whip the cream cheese and Swerve sweetener.

  3. Add the peanut butter powder, peanut butter, egg and baking powder and mix to form a dough.

  4. Fold in the mini chocolate chips.

  5. Cover a cookie sheet with parchment paper or a silicone mat. Using a spoon drop the cookies on the cookie tray. This batch made 15 for me.

  6. Spray a piece of wax paper and use that to flattened the cookies out.

  7. Bake for about 10-15 minutes until they are firm to the touch but not too firm.

  8. Let them cool completely before eating.
