In a mixing bowl add the softened cream cheese and Swerve sweetener.
Cream together and then add in the peppermint extract and cream.
Beat until nice and fluffy.
Add your color drops now if using. Then fold in mini chocolate chips.
Spoon into molds and add your popsicle sticks.
Place into freeze for 6-12 hours.
