Easy Toasted Coconut Pumpkin Seed Balls - low carb snack

These toasted coconut pumpkin seed balls only have 4 ingredients and you can make them in minutes. They make for a delicious and healthy keto snack that only have  0.8g net carbs per ball.

Ingredients

  • 1 ½ cup roasted pumpkin seeds (pepitas)
  • 2 tablespoons butter, cold
  • 2 tablespoons Swerve Brown sugar
  • ¼ cup toasted coconut, unsweetened

Instructions

  1. In a small skillet, add the coconut and cook until it starts to brown. Take off the stove and add to a paper towel until it cools. Then pour into a small bowl and set aside.

  2. In a mini food processor add the pumpkin seeds and grind until it becauses I stick dough.

  3. Add in the brown sugar and pulse until well mixed. Then add in the cold butter and pulse until it because a batter like texture.

  4. Take a tablespoon or small scoop and drop little scoops of the mixture into the coconut. Roll around to make a ball and then place on a plate. Continue with all the batter. I was able to get 18 balls out of this recipe.

  5. Place the plate into the freezer for about an hour. Then either store them in the freezer or refrigerator.

  6. If you store in the freezer and they are too hard, let them sit out for a few minutes and they should be fine.
