Low Carb Pork Chop Casserole in the Slow Cooker

This easy low carb pork chop casserole only needs 4 ingredients and you can make it in a slow cooker! Each serving is only 4.5g net carbs.

Ingredients

  • 1.7 lb s pork chops, thin
  • 12 OZ Ken's Garlic Parmesan dreessing**
  • 20 oz baby spinach (2 bags)
  • ¼ cup chopped sun dried tomatoes

Instructions

  1. Spray the pot of your slow cooker and then place ½ of the bag of spinach on the bottom.

  2. Next layer half of the pork chops and pour half of the bottle of the dressing on top. 

  3. Add the rest of the bag of spinach, pork chops and dressing. Place on lid and cook on high for 4 hours or low for 8 or until the pork chops are cooked. Mine were thin so it didn't take long on high.

  4. When the pork chops are done, take off the lid and add in the other bag of spinach leaves. Do it slowly and stir as you are doing it. It will wilt quickly and shrink down a lot. 

  5. Once you have all the spinach in the casserole, add in the sun dried tomatoes. Mix well and serve.

  6. **Note: This produced a lot of sauce when I used the whole bottle of dressing so you might want to use ¾ of the bottle or 12 oz.
