This low carb cheesy chorizo dip has a layer of spicy chorizo on the bottom and then is topped with 4 different cheese to make for a delicious low carb dip. A serving size of ¼ of the recipe has only 5.1g net carbs. Eat with peppers or other raw veggies.
Preheat oven to 350 degree F.
In a medium sized skillet, brown the chorizo. Then add to a baking dish to cover the bottom.
Lay the slices of Muenster and mozzarella cheese slices. Sprinkle the queso quesadilla cheese and the queso cotija cheese over top and place in the oven.
Bake for about 20 minutes or until the cheese is nicely melted and browned.
Eat immediately with raw vegetables. Sliced mini peppers make great scoops for this dip.
To reheat leftover dip, place in the oven or microwave.
