Season your filets with salt and pepper. Then add the butter to a large saute pan and bring to medium high heat.
Brown filets on both sides then take out of pan.
Add the cream cheese, cream, tomatoes, garlic and water to the pan. Whisk until the cheese is melted and everything comes together.
Add back the fish and spoon the sauce over the filets. Cover and cook for 10 minutes or until the fish is cooked through.
Serve immediately.
