Ingredients

  • 2 cups red cabbage, thinly sliced and chopped
  • ¾ cup mayo
  • 3 tablespoons lime juice
  • teaspoon salt
  • 2 teaspoons Swerve sweetener
  • zest of half of a lime
  • 1 cup cucumbers cut into matchsticks

Instructions

  1. In a bowl, whisk, lime juice, mayo, salt and Swerve sweetener. 

  2. Thinly slice cabbage and toss with dressing.. Cucumber will make it a bit watery after awhile so it's best to add them right before serving. However you can make the rest of the salad ahead of time if you wish. 

  3. Refrigerate for awhile to let the slaw soften before eating.
