Ingredients

  • 1 lb chicken breasts, thinly sliced
  • 1 tablespoons olive oil
  • 2 cloves garlic, crushed
  • 4 tablespoons tomato paste
  • 1 teaspoon anchovy paste
  • 1 cup grape tomatoes, halved
  • 15 olives, halved
  • 1 cup broth
  • salt and pepper
  • 1 tablespoon grated parmesan
  • 5 basil leaves, chopped

Instructions

  1. Prepare the chicken by cutting in half like you would a bagel. If you chicken breasts are thin already, this step is not needed. Sprinkle with salt and pepper. 

  2. Add the oil to a large saute pan and heat to medium high. Brown the chicken breasts for about 3-5 minutes per side. 

  3. Take out the chicken and add the chicken broth, tomato paste and anchovy paste. Whisk to combine and then add the garlic, tomatoes and olives.

  4. Let simmer for 5 minutes, then add in the chicken, cover and cook for 10 minutes or until the chicken is cooked. 

  5. Sprinkle Parmesan and fresh basil leaves over top and serve.
