This low carb pesto tilapia dinner can be made in less than 20 minutes. The pesto is made from fresh spinach and toasted walnuts and adds lots of healthy color and flavor to this mild white fish.
Preheat oven to 350 degrees F.
In a food processor add garlic and walnuts and pulse. Then add in the spinach, salt, cheese and olive oil. Process until it all comest together.
Spray a baking dish with cooking spray and lay out your tilapia filets. Take a paper towel and dry off the filets. Spread the pesto over the filets. I only used half of the pesto to make 4 filets.
Place in the oven and bake for 12 minutes. Then set under the broiler for 3 minutes or until bubbly and a little browned.
Serve immediately.
