Who would know low carb zucchini noodles carbonara could taste so good! This easy low carb pasta dish takes less than 20 minutes to make and is so rich and creamy you will really enjoy the veggie noodles!
Using a spiralizer or vegetable peeler, make your zucchinis into noodles.
In a large saute pan, fry bacon pieces until nice and crisp and then take out and set aside.
Add garlic to bacon grease and saute for 1 minutes. Then add in the butter, cream cheese and cream. Whisk until smooth.
Add the Parmesan cheese and mix until melt and sauce begins to simmer.
Place zucchini noodles into the sauce, cover and let cook for 3-5 minutes over medium heat until desired doneness. (I like my al dente).
Take off stove and mix in crispy bacon pieces.
