Cookie Dough Fudge (Only 4 Ingredients)

This delicious cookie dough fudge only has 4 ingredients and is gluten free and healthy.

  • 2 cups cashews
  • ¾ cup dried chopped dates
  • ¼ cup coconut sugar
  • ¼ cup chocolate chips


  1. Pour boiling water over dates and let soak for 20 minutes.
  2. Roast cashews in a nonstick skillet pan over medium heat until lightly browned.
  3. Let cashews cool a bit and then add to food processor with coconut sugar.
  4. Process until a crumbly dough. Not a cashew meal consistency nor a butter. Crumbly dough.
  5. Drain dates (should be about a ½ cup now) and add to food processor.
  6. Process until it becomes a glossy dough. This should take only a few minutes.
  7. Line a baking dish (8x8) with parchment paper. Press the fudge into the dish and smooth with fingers or use the excess parchment paper.
  8. Add chocolate chips and press down with parchment paper until the top is smooth.
  9. Freeze for 30 minutes and then cut into squares.Store in freezer or refrigerator, whichever you prefer.
