Savory Plantain Cracker

Recipe: Savory Plantain Crackers

Ingredients

  • 1 plantain preferably green but can be yellow
  • 3 Tablespoons coconut oil or olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper
  • water or almond milk optional...used for thinning if mixture is too thick

Instructions

  1. Preheat oven to 300 degrees F.
  2. Chop up the plantain and put into a high speed blender or food processor.
  3. Add spices and melted coconut oil.
  4. Process until nice and smooth (the consistency of hummus).
  5. Add water or almond milk 1 T at a time if it's too thick. You need to spread this mixture.
  6. Spread into a thin layer on a parchment lined cookie sheet.
  7. Bake for 10 minutes.
  8. Take out of oven and score with a pizza cutter or knife.
  9. Put back in oven and cook for 30-40 minutes. Make sure they don't burn. They will get dark in color but depending on thickness, they could burn.
  10. Break of the outer crackers if they are done.
  11. Turn off oven and keep crackers in the oven to continue to cook for up to 30 minutes, checking at 10 minute intervals and breaking off the crackers that are done.
  12. Let them cool and then enjoy!
