  • 1 Tablespoon butter
  • 1 lb of white fish, I used frozen tilapia
  • 12 oz jar Aldi artichoke salad or other brand equivalent
  • cup sundried tomatoes chopped
  • 1 cup densely packed fresh baby spinach, chopped
  • 1 teaspoon crushed garlic
  • 2 Tablespoons capers


  1. Thaw fish if frozen and pat dry.
  2. Melt the butter in a sauté pan over medium high heat.
  3. Add fish and brown or 2 minutes on each side.
  4. Add all the ingredients, over and cook for 5-10 minutes over medium heat.

  5. Serve over rice, cauliflower rice or eat as is.
